Mango and passion fruit chocolate cake (vegan)

Today I baked this cake for a friend. It was an experiment and it worked out pretty well. It takes 5mins to prepare and 35 to bake. When I finished I realised it’s also vegan.


½ cup white sugar

¼ cup brown sugar

1¼ cups all-purpose white flour

¼ cup unsweetened baking cocoa

2 tsp white wine vinegar

2 tsp baking soda

1 pinch of salt

1 cup mango and passion fruit coulis, I used this one

Instructions: mix together all the dry ingredients, you can follow the order above which is what I did. Add the coulis. Bake for 35 minutes at 180 degrees celsius. I used a small baking tin of 19cm diameter. Let cool in the oven, slice and serve.
